There weren’t too many vegan restaurants in Aspen, Colorado. Pyramid Bistro was one of the few options that came up when I searched on Yelp. It’s located on the second floor of a book store in downtown Aspen. The place does get busy so be prepared to wait if you’re coming during dinner rush! They have both indoor and outdoor seating.
We ordered:
Vegetable Pot Stickers (vegan) – curried peanut sauce, pickled fennel & cucumber salad
Stuffed Cremini Mushrooms (vegan) – with romesco sauce & arugula salad
Lemongrass Tofu (vegan) – forbidden rice, broccoli, rainbow peppers, napa cabbage,
cilantro, mushrooms, lemongrass tamari
Sunflower Seed Crusted Cajun Salmon (non-vegan) – roasted peruvian potatoes, kale & squash in lemon almond “beurre blanc”, pickled cucumbers
Our dinner started off with freshly baked bread that was still warm when served! This was paired with a delicious vegan pesto sauce.

Stuffed Cremini Mushrooms
Our appetizers were the Vegetable Pot Stickers and Stuffed Cremini Mushrooms. Out of the two appetizers, I would say the Stuffed Cremini Mushrooms were more unique and tasty for me. The potstickers were good, but wasn’t anything too special.
